A recipe from the internet; delicious potato soup that reminds me of the one from Wildflower Bread Company.

  • 1/2 stem of celery
  • 1 onion
  • 200g ham or bacon rashers
  • 8 potatoes
  • 1 ltr of broth
  • 250g cream cheese
  • 50g sour cream
  • some fresh dill
  • milk / cream
  1. chop celery
  2. dice onion
  3. cut bacon in 3mm stripes / or cut the ham into small cubes
  4. sauté in a little bit of butter until tender
  5. peel and roughly cube potatoes
  6. add potatoes and broth to vegetables
  7. boil on small heat until the potatoes are tender
  8. add cream cheese and sour cream
  9. cut the fresh dill and add
  10. liquify soup with hand mixer
  11. add milk or cream to get your preferred consistency

Comment: serve with butter toasted croutons on a cold day; you may want to boil a hog in the soup for more taste.
