A recipe from the internet; delicious potato soup that reminds me of the one from Wildflower Bread Company.
- 1/2 stem of celery
- 1 onion
- 200g ham or bacon rashers
- 8 potatoes
- 1 ltr of broth
- 250g cream cheese
- 50g sour cream
- some fresh dill
- milk / cream
- chop celery
- dice onion
- cut bacon in 3mm stripes / or cut the ham into small cubes
- sauté in a little bit of butter until tender
- peel and roughly cube potatoes
- add potatoes and broth to vegetables
- boil on small heat until the potatoes are tender
- add cream cheese and sour cream
- cut the fresh dill and add
- liquify soup with hand mixer
- add milk or cream to get your preferred consistency
Comment: serve with butter toasted croutons on a cold day; you may want to boil a hog in the soup for more taste.
