After no longer finding our favorite, nutty breakfast granola cereal we decided to beat it and create our own version. This is simple and offers a chance to tailor breakfast to one's liking.
- 2 cups of rolled oats
- 1/2 tsp salt
- 1/2 tsp cinnamon (you could also add nutmeg in addition)
- 1 cup nuts and seeds (in the picture we used hazelnuts, pecans, macadamia nuts, almonds, sunflower seeds and pepitas)
- 1/2 cup oil - liquid (we used coconut oil and melted it)
- 1/2 cup honey, soft (maple syrup would be another option)
- 1 tsp vanilla
- mix the dry ingredients
- mix all wet ingredients into the bowl with the dry ingredients and mix thoroughly coating the dry ingredients
- spread on a baking sheet; I left some space in the middle to allow for more surfaces to brown in the oven
- bake in the oven for about 20' at 160C (fan forced)
- let the granola cool off completely before putting it into a container
There are so many ways to vary the recipe; ideas include, many different types of nuts/seeds, some (dried!) fruits and berries, a little bit of lemon zest, chocolate morsels (add after the granola cooled out!)
