After no longer finding our favorite, nutty breakfast granola cereal we decided to beat it and create our own version. This is simple and offers a chance to tailor breakfast to one's liking.


 

 

  • 2 cups of rolled oats
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (you could also add nutmeg in addition)
  • 1 cup nuts and seeds (in the picture we used hazelnuts, pecans, macadamia nuts, almonds, sunflower seeds and pepitas)
  • 1/2 cup oil - liquid (we used coconut oil and melted it)
  • 1/2 cup honey, soft (maple syrup would be another option)
  • 1 tsp vanilla
  1. mix the dry ingredients
  2. mix all wet ingredients into the bowl with the dry ingredients and mix thoroughly coating the dry ingredients
  3. spread on a baking sheet; I left some space in the middle to allow for more surfaces to brown in the oven
  4. bake in the oven for about 20' at 160C (fan forced)
  5. let the granola cool off completely before putting it into a container

There are so many ways to vary the recipe; ideas include, many different types of nuts/seeds, some (dried!) fruits and berries, a little bit of lemon zest, chocolate morsels (add after the granola cooled out!)
