So, if you are in a hurry to make lunch but still want to have something a bit nicer, try this recipe which can be put together in about 30 minutes and yields 4 portions.
- 4 Tsp flour (self raising or regular flour)
- a little bit of salt
- 1 tsp of baking powder (only if you use regular flour)
- 4 Tsp of yoghurt (I used vanilla, Greek will work as well)
- 80g of salmon
- salad
- tomatoes
- 4 eggs
- mix the dry ingredients
- add the yoghurt to the dry ingredients and make a dough; add some flour (or yoghurt) to get the right consistency; then set aside
- pan fry the salmon and set aside
- cut up salad and tomatoes (and optionally onions)
- cut the dough into 4 equal parts and form balls before flattening them into flatbreads; pan fry them for a few minutes on each side in a non-stick pan. They will fluff up
- poach each egg in hot water
- take the flat bread and a layer of salad/tomato; then put some salmon pieces on top and finish with a poached egg
- add pepper and salt to your liking et bon appétit!
Comment: The base recipe can easily be modified e.g. add coriander into the dough, or hummus on top of the dough; use smoked salmon; rocket salad and tomato etc. Your imagination is the limit. No matter what you do, you will have a fresh, light and warm meal.
