The following recipe has been inspired by the one too many cooking shows I have watched.


Modena Vinegar Reduction 

  • 1 small onion
  • 1/4 cup of Modena Vinegar
  • 2 Tbsp sugar

Main Dish

  • 1 Basa Fillet, 150g
  • Ginger, Jalapeno Chilies
  • good amount of fresh spinach
  • a little bit of butter or olive oil

Modena Vinegar Reduction 

Prepare the Modena Vinegar Reduction ahead of time

  1. cut onion into thin onion rings and pan fry in a little bit of oil
  2. add Modena Vinegar to the onion rings and reduce heat
  3. add sugar and let it reduce until it becomes thick, coating the back of a spoon
  4. take the reduction off the heat

Main Dish

  1. dust fish in flour
  2. cut ginger, jalapeno chilies into thin stripes and put on top of the fish 
  3. heat some butter in a skillet (or use olive oil) and slow pan fry the fish on top of the ginger and chilies; this takes about 5' (2-3 minutes each side)
  4. take the base out of the pan and keep it warm
  5. add spinach and cook it down in the fish pan; remove the spinach while the leaves still have some crispness (takes about 1-2 minutes)
