The following recipe has been inspired by the one too many cooking shows I have watched.
Modena Vinegar Reduction
- 1 small onion
- 1/4 cup of Modena Vinegar
- 2 Tbsp sugar
Main Dish
- 1 Basa Fillet, 150g
- Ginger, Jalapeno Chilies
- good amount of fresh spinach
- a little bit of butter or olive oil
Modena Vinegar Reduction
Prepare the Modena Vinegar Reduction ahead of time
- cut onion into thin onion rings and pan fry in a little bit of oil
- add Modena Vinegar to the onion rings and reduce heat
- add sugar and let it reduce until it becomes thick, coating the back of a spoon
- take the reduction off the heat
Main Dish
- dust fish in flour
- cut ginger, jalapeno chilies into thin stripes and put on top of the fish
- heat some butter in a skillet (or use olive oil) and slow pan fry the fish on top of the ginger and chilies; this takes about 5' (2-3 minutes each side)
- take the base out of the pan and keep it warm
- add spinach and cook it down in the fish pan; remove the spinach while the leaves still have some crispness (takes about 1-2 minutes)
